·         I’m loving the taste of the Santé Sauvage wild blueberry powder. It tastes really pure. It’s lighter in colour than the one I used in the past. Why is that? à

Yes, our wild blueberry powder is 100% pure fruit from the wild variety Vaccinium angustifolium and has a delicious taste of the wild fruit. It is sweeter and less acidic than the European bilberry, and lighter in colour. Colour variations can also occur in the same species of wild blueberry due to the raw fruit itself, the soil it grows in, and/or to the drying process*. The pulp of the vaccinium angustifolium variety of wild blueberry is pinkish-white while the skin is dark blue/purple. If you look at a cross-section of the vaccinium angustifolium, you will see its pale whitish flesh tinged with pink on the outer layer of the pulp. The European bilberry (Vaccinium myrtillus) is dark blue throughout giving a much darker powder. (The larger cultivated blueberry V. corymbosum is whitish green inside). So our wild blueberry powder reflects the natural colours of the wild vaccinium angustifolium.

 

·         Where does your wild blueberry powder come from?à

Our Canadian wild blueberry powder comes from wild blueberries grown on the Eastern seaboard of Canada.

Could you explain how the wild blueberries are processed? à

The freeze-dried fruit process is simple: the fruit is flash-frozen directly after harvesting which ensures a maximum of freshness and preserves a maximum of vitamins and phytonutrients. The term for this process is IQF which means “Individual Quick Freezing”. The process takes a few minutes. The fruit is then placed in a vacuum - this is the sublimation stage during which the fruit releases its water as the ice is transformed into vapour. All the moisture is removed, therefore the weight of the fruit decreases while a maximum of nutrients and flavours are retained. It does not shrink which makes freeze-drying a better option than dehydration. 


·         Is your powder an extract?

The only thing that has been extracted from the fresh fruit is the water. It takes approximately 7 kilos of fresh fruit to obtain 1 kilo of powder.  We don’t talk about an extract, we talk about a fresh fruit equivalent, which is around 7:1.
