The red dragon fruit, also known as pitaya roja, is a remarkable tropical fruit with a bright pink or dark red skin and sweet, bright red or magenta flesh speckled with tiny black seeds.

Native to Central America but widely cultivated in Asia, particularly Vietnam and Thailand, this exotic fruit has gained worldwide popularity for its unique appearance, subtle flavour and many health benefits.

The taste of red dragon fruit is slightly sweet and often compared to a mixture of pear and kiwi, with a hint of berry.

Nutritionally, the red dragon fruit is rich in vitamins C, B1, B2 and B3, as well as essential minerals such as iron, magnesium and calcium.

Its deep red colour is due to the presence of powerful antioxidants called betalains, which can help reduce inflammation and protect against oxidative stress.

Conservation Freeze-dried foods have a very low moisture content, which makes them stable, but they can absorb moisture from the air and become sticky or clumpy if not stored correctly. Here are some tips for storing pitaya: Keep the lid closed after use. Keep the container in a cool, dry place away from direct sunlight and sources of heat or humidity, for example near the cooker or in the fridge. Avoid storing freeze-dried pitaya in the fridge, as condensation may form when you remove it, causing moisture to build up.
