Use approximately 3/4 cup of dried elderberries to 3 cups of water for a batch of syrup
Elderberry Syrup Recipe
Ingredients:
3/4 cup dried elderberries
3 cups water
3/4 cup raw honey
Optional extras: 1 cinnamon stick 1 whole star anise ¼ teaspoon whole cloves
Instructions:
Place the dried elderberries and water in a medium saucepan (with optional spices) over the heat. Cook over a medium-high heat for 45 minutes to 1 hour, until the mixture is thick and reduced by half. Remove the syrup and allow to cool completely. Strain the syrup into a bowl, squeezing out the juice from the berries with a wooden spoon and discarding the whole spices. Whisk in the raw honey and pour into jars. To maintain good health, take 1 tablespoon a day. To help recover from a cold or flu, take 1 tablespoon 3 times a day. Makes: 1 to 2 cups.
